My areas of interest are process and product development; physicochemical properties of biopolymeric ingredients and textural/structural characteristics of composite food products; component characteristics on freeze-thaw stability; cryostabilization of fish mince; flavorants, aquafeed and nutraceuticals from marine sources through bioconversion process.
